New York City Chef Arrives to Shawnee!
Shawnee on Delaware, Pennsylvania. To
further enhance the remarkable renovations that are taking place
at Shawnee, the management team decided to bring in a top-notch
chef just in time for the upcoming peak of the golf season. Carl
Davies, and original native of Adelaide, Australia, will take over
as the new Executive Resort Chef here at Shawnee. So when you meet
him, you will not only taste his delicious food, but also enjoy
his charming accent.
For many years, Carl lived and worked in New York City, before
recently moving to the Poconos with his wife Barbara, when she
landed a job in the area. He previously worked in the heart
of the city for a large catering company. During his time
there he catered for major corporate events including those of
Nike and Louis Vuitton. The company also catered for private
home parties, many of which were hosted by celebrities. Carl excitedly
remembers cooking for many big names, including: Barbara
Walters, Robert DeNiro, Yoko Ono, and Mick Jagger’s daughter.
He also catered for Neil Diamond’s son’s wedding in
April 2004.
Without hesitation, though he credits much of his expertise to
the Big Apple, Carl admits that he was quite anxious to move to
the Poconos. He is a huge lover of snow and felt he never
got to enjoy it in the City. He anxiously shares, “I
wouldn’t mind it if it snowed 9 months out of the year”. Along
with the winter weather, Carl also looks forward to the slower
and more peaceful pace of a rural area as opposed to the busy lifestyle
they carried in New York. In conjunction with cooking, Carl
also enjoys hosting fundraising events with his largest charitable
dinner taking place this past year when he cooked for approximately
1,300 people in order to benefit the Ovarian Cancer Foundation. When
asked what his favorite dish is, Carl replied, “I don’t
necessarily have one… I enjoy everything I cook. I
like preparing something as basic as Pizza, but also enjoy cooking
gourmet”.
The Shawnee Inn is very excited to have
Chef Carl Davies on board. His impact is being felt already, as during the last
couple of weeks the resort has received many positive comments about
