Unique Practices Cooking Up at The Gem and Keystone Brewpub

The Art of a Scratch House and Mastering the Wood-Fired Grill-The Gem and Keystone

The Gem and Keystone Brewpub is located just adjacent to the entrance of The Shawnee Inn and Golf Resort. Although the restaurant is not physically attached to the Shawnee Inn, it is very much a part of our resort. The Gem and Keystone Brewpub has more ShawneeCraft beer on tap than anyplace in the world. More than anything else, The Gem and Keystone Brewpub fully embraces the Shawnee Inn’s commitment to delivering an authentic experience.

The Gem is a “Scratch House”. A scratch house is a restaurant that specializes in recipes-from-scratch menus. In some ways it’s a “just like mom” used to make philosophy. Dry and wet ingredients mixed in-house to create almost everything on our menu. Steaks cut by hand, dressings without preservatives, and, when in season, produce from the Shawnee Island Farm. The Gem even prepares many of its entrees on the Pocono Mountain’s only wood-fired grill – infusing a delectable oaky smoked flavor into savory steaks and juicy burgers.

The special attention paid to creating the Gem’s scratch house menu means that guests of the restaurant dine on cuisine that is not available anywhere else in the world. Sure, people can buy a burger at almost any restaurant, but can they buy one that was grilled using local felled lumber? Can they savor a pure-beef burger finished with lettuce and tomatoes grown in our own nutrient-rich river-bed soil?

Taste Shawnee.
